According to Mill & Mortar, it is the best table pepper. Only about 10% of the pepper crop in Sre Ambel receives the "Best Quality" incentive. This pepper has notes of eucalyptus and goes well with all kinds of meats in Asian and French cuisine.
Pepper farmers in Sre Ambel are not certified organic because their production is currently too small to make a return. The beans are harvested and sun-dried in the plantations, then sorted by hand to achieve extremely consistent quality.
