Candied violets

For centuries we have been using edible flowers in confections, we use them for spices, we put them in marmalades and desserts.

Their French supplier, which has been producing the relevant raw material since 1818, is the last one left in its branch, in the Toulouse area. He has perfected his technique over 200 years, harvesting flowers and leaves at the height of the flowers' bloom, crystallizing them with sugar spray.
