Carnation is a special flower that grows on tall trees reaching 10 meters. Mill & Mortar's cloves come from a village cooperative in Sri Lanka called Pilimathalawa, where the harvest takes place within a few days as the clove buds must be picked at the right time. Fresh and high-quality cloves can be recognized by the porous, light brown buds that are attached to their dark stems.
Cloves are an essential ingredient in the delicious Chinese "five spice" mix, as well as in many other curry combinations. In Danish cuisine, cloves are a must-have in roast pork with pickles, in luteniks, and in various fruit preserves. It can also be used in various types of cake. Cloves are easily ground with a mortar or coffee grinder.
