Introducing the latest in chill coffee vibes: our decaffeinated coffee processed using the sugar cane method. Ethyl acetate - yep, that same ester that gives bananas their kick and pops up as a byproduct in fermented sugars - is our secret weapon. It’s like a caffeine extraction ninja, sneaking into the green coffee beans to snatch away the caffeine without a fuss.

Here’s how they do the decaf dance: first, they sort the beans and steam them for 30 minutes at a low temp and pressure to open up their little pores, prepping them for the caffeine heist. Next, the beans take a dive into a solution of water and ethyl acetate. This is where the magic happens. The E.A. gets cozy with the chlorogenic acid salts inside the beans, whisking away the caffeine in a gentle embrace.

But wait, there’s more! The tank is drained and refilled repeatedly over eight hours until the caffeine decides to pack its bags and leave for good. After the E.A. has done its thing, they give the beans a final rinse to wave goodbye to any lingering ethyl acetate traces - although it's only a baddie in really big amounts (think 400 parts per million or more). Finally, the beans are dried off, fluffed up, and packed, ready to hit the road to your cup.

So there you have it: our decaffeinated beans, ready to deliver that mellow buzz without the buzz. Perfect for late-night coffee sessions or when you want to keep it cool with your caffeine intake. Enjoy the chill, full-flavor experience without losing any sleep!

Our coffee roasting adventure began in 2021, when we decided to “roast things ourselves” for the Bulgarian Aeropress Championship. What started with Roest grew into something much more serious (and delicious). In 2024, we upgraded to the Stronghold S7 Pro – because if we’re going to make magic, let’s make it with the best coffee roaster. Every coffee in our selection passes the “Wow!” test on the cupping table and must score at least 2 points to make the team (i.e. be liked by at least two of our team of three). Head roaster Hristo is the man behind every roasted bean – a perfectionist who won’t approve a profile until the cup is magical. Every customer is a tester whose feedback we can’t wait to read and hear so we can get better.
