Jalapeño

The fruit of the jalapeño plant is sweet with fresh green notes, and the hotness comes from the seeds and pith. The moderate spiciness of the Jalapeño (2,500-10,000 on the Scoville scale) contributes to flavoring everyday dishes without burning the taste buds.

Chipotle

A smoky, medium-hot chili from hot peppers.
Chipotle is a smoky chili from Chihuahua, Mexico. It's made from medium-hot jalapeño peppers that are rated between 2,500 and 10,000 points on the Scoville scale.
These chilies are grown to full maturity until they darken to a dark brown color and form folds. The chili is then dried for several days in fire ovens. The result is a flavorful combination of quality peppers and smoke, and is typically used in sauces, salads, and marinades.

Cayenne

A classic chili pepper from Spain.
Cayenne pepper is one of the oldest and most familiar chilies in the surrounding latitudes. This pepper is very hot (between 30,000 and 50,000 points on the Scoville scale), therefore, even when ground into a fine powder, it should be used in small quantities.
Mill & Mortar's cayenne pepper is grown organically in Spain, where it is called Pimenton Picante.
