Sumac is widespread in Mediterranean and Middle Eastern cuisine, where it is used in marinades, rubs and dips, or sprinkled over food when serving. Sumac is one of the few spices with a distinctive sour-bitter taste, which is why it is used in Middle Eastern cuisine like vinegar, lemon or tamarind in other countries. Sumac is part of the famous Za'atar spice mix and is used in the fattoush bread salad dressing. Sumac grows on bushes, in dense cone-shaped clusters, and the fruits ripen in autumn, when they turn a deep red color. The fruits are dried and ground coarsely, and the color is solid burgundy.
