And finally...we're featuring the amazing Ugandan vanilla pods that Mill&Mortar source directly (as well as all the other spices they offer).
The variety is Vanilla Planifolia, also called Bourbon vanilla. The vanilla pods are grown by smallholder farmers in the area around our own White Nile vanilla project (which Mill&Mortar expect to tap into in 2023). Therefore, there is control over the origin and the pods are left to fully ripen.
Mill&Mortar sort the pods by weight and therefore offer the product in several categories:
Single pod: 4 g | Several pods: 10 yrs.
To prevent drying, add a few drops of cognac or vodka to the bottom of the vanilla cup. Feel free to put the grated vanilla powder into a cup of sugar so you can make your own vanilla sugar
