Brunkage literally translates as "brown cake". In Denmark, it is these sweets that bring the Christmas mood to every home with their characteristic aroma. The masterful combination of real cinnamon from Sri Lanka, ginger, allspice, cloves takes care of the festive mood.

Necessary products
250 g butter, 125 g sugar syrup (light syrup), 250 g brown sugar, 2 tsp. baking soda, 1 tbsp. cold water, 7 tsp. Brunkager, 60 g pickled oranges (sweet from oranges), 25 g pistachios (without salt), 150 g whole, blanched almonds, 500 g flour.
Instructions
Melt the butter, sugar syrup, and brown sugar over medium heat on the stove, then set aside. In a large bowl, mix the spices and flour, then add the oranges, pistachios and almonds. Separately, dissolve baking soda in the water and add it to the mixture. Knead everything until a homogeneous dough is obtained. Transfer the dough to a suitably sized baking tray, pressing down to coat evenly and flatten the surface to form a large, even rectangle. Let it sit for 1 day. The next day, cut the dough into blocks, which you cut into thin slices. Arrange the slices on baking paper and put in a preheated oven at 180 degrees for about 10 minutes (thin the pieces because they will "spill" a little). Leave the biscuits to cool on a wire rack and serve them for the enjoyment of those around you.
